GIZ-DODO
Recipe
Chicken gizzard
Plantain (very ripe but not over ripe)
Large fresh tomato
Corn pepper to suit your taste
Red bell pepper (optional)
Teaspoon ground crayfish (optional)
Large onion ball
Garlic clove or ½ teaspoon garlic powder
Teaspoon each of curry and thyme
Stock cubes
Vegetable oil (enough for frying)

Note:
If you have chicken stew, you won’t need the tomatoes and peppers.

To garnish
I red bell pepper (chopped in tiny cubes)
I green bell pepper (chopped in tiny cubes)
I small red onion (chopped in tiny cubes)


Method
1.     Wash the gizzard properly.
2.     Season and cook until tender and allow the water to dry with it.
3.     Fry the chopped plantain and set aside.
4.     Make the sauce and allow it to dry.
5.     Pour the gizzard to the sauce and simmer for 1 minute.
6.     Add the fried plantain, chopped onion, green and red pepper.
7.     Mix thoroughly and put off the heat
