PEPPERED CHICKEN



PEPPERED CHICKEN
Recipe
Chicken (preferable Hen)                       -           1.2kg
Bell peppers                                                -           2
Scotch bonnet peppers/Habanero      -           1-2
Onions                                                          -           2 medium size
Vegetable Oil                                              -           1 cooking spoon
Small stock cubes                                     -           6
Thyme                                                          -           1 teaspoon
Salt (to taste)

Method
1.     Wash the Chicken and part dry
2.     Season the Chicken with magi, thyme and diced onions.  Mix very well, cover and place in the fridge to marinate for at least 1 hour.
3.     Transfer the Chicken into a pot and start cooking.
4.     Give the peppers a rough blend
5.     Take the chicken out of the pot and grill in the oven.
6.     When the chicken is golden all over, pour the vegetable oil into a pot.
7.     When hot, pour the pepper and start frying.
8.     Fry till there is no more water and add the grilled chicken and stir very well until every bit of the chicken is coated with pepper.
9.     Bring the chicken out and garnish with slices of onion.

Note:
·        Hen tastes much better than cockerel.
·        You may season the chicken with other spices like ginger, garlic and curry.
