PEPPERED GIZZARDS
Recipe
Gizzard                                            -          
Chopped onion                             -           1
Thyme                                              -           2 teaspoons
Garlic Cloves (minced)               -           2
Beef boullion                                 -           1 tablespoon
Red Bell pepper                            -           3
Habanero Peppers                       -           4
Peanut Oil                                      -           ½ Cup
Brown sugar                                  -          


Method:
1.        Wash the gizzard and rinse properly.
2.        Mix the chopped onion with the gizzard.
3.        Add thyme, garlic and the beef boullion.
4.        Add enough water to cover gizzard and cook for about 25 minutes.
5.        Blend the onions and pepper together adding little water (rough blending)
6.        Add the peanut oil to skillet
7.        Once oil is hot, add the gizzard to sear
8.        Add pepper sauce to skillet
9.        Cover and cook for 20 minutes.
10.  When cooked, add the brown sugar to give it a sweet taste.
11.  Cook gizzard for an additional 20 minutes over low heat.
12.  Use skewers like bamboo sticks to serve this dish as an appetizer.
