IN BARTER
Recipe
Fish
(any type preferable croaker) of 2 medium size
Spices/
herbs (pasley, spring onion
½
Celery ½ ginger etc).

Spirit of pasley.
1
stem of spring onion
½ a stem of celery
4
Cloves of garlic
½
an inch of ginger
¼
of a medium onion
1
stock of bullion
A
cup of flour
½
teaspoon of baking powder
Salt
to taste.
Vegetable
oil for frying
Method
1. Make the
marinade by blending the herbs and the spices together (Add, the garlic,
ginger, pasley, celery, spring onion and chopped onion, stock bullon and add about 2
tablespoon of water and blend).
2. Wash the
fish and cut into small pieces (as thinly as possible).
3. Remove all
the intensive and wash thoroughly and dram.
4. Add salt and
a tablespoon of manade into the fish & mix
and salt aside.
5. Make the
barter by adding a ¼ teaspoon of salt, ½ a teaspoon of baking powder & mix
add some water and mix Note: you could add pepper when blending your marinade.
6. Set aside
some dry flour in a plate.
7. Take a slice
of the marinated fish and dip into the flour that has been set aside. This
helps the barter to stick properly to the fish.
8. Dip it into
the barter and put in the heated oil to cook for about 10 mins.
9. Flip to the
other side and allow to cook for about 5 mins.

Serve with potatoes fries or plantain fries.
Note:
It
could be chicken remove the skin, season the chicken the same way with the fish and
boil for 10 mins before dipping into the barter.
